Making your own nut butter is so simple, and more delicious and usually less expensive than buying it already made at the store. Nut butters offer a ton of great nutrition like fiber to fuel a healthy gut, lots of unsaturated fat for long lasting energy that also supports heart health, and a bit of plant based protein for strong muscles.💪🏽

Nut butters’ only downfall perhaps is how easy it is to over do it as they taste so good. Nut butters, like the nuts they are made of, are pretty high in calories. Just keep an eye on portion size while enjoying! A standard nut butter portion providing about 200 calories is 2 tablespoons, or about the volume of 2 thumbs.

Honey Roasted Almond Butter

Makes about 1.5 cups

2 cups (300g) raw whole almonds

2 tbs. (30ml) honey

1/4 tsp. flaky salt

Spray a sheet pan with pan spray, or line with parchment paper and lay out almonds in an even layer. Drizzle honey over top and sprinkle on salt. Bake at 350'F/175’C for 10-15 minutes, until almonds are golden and smell toasty. Let cool to room temp, then blend until super smooth in a food processor. Blending can take some time, usually like 6-8 minutes total, so be patient. Scrape the sides down a few times to make sure all chunks get incorporated. Store covered at room temp or in the fridge.
